Red Rooster is one of the better known American roast houses on the east cost, based out of Virginia. The Brazil Peaberry is a vey unique coffee, with a very high acidity content for a coffee which is approaching a medium roast. The fruit overtones are evident, lead predominantly by flavors of cherry, dried apricot, and hints of citrus. The flavor is rounded out by a buttery pecan body and the ample tartaric acid content gives a dry, winey finish, reminiscent of a dry pinot grigio. The coffee is naturally dried, meaning the coffee cherry is allowed to dry and ferment naturally in it’s husk, which imparts all of the beautiful fruity aromas.

Cachoeira Farm is a third-generation family run business run by Homero Aguiar Paiva who bought the farm his late father grew up on from his aging uncle. They have been consistently recognized as ethical, sustainable producers or high quality, organic coffee. They were most recently honored with a first place finish at the 2016 Cup of Excellence.
